On Hold

So I woke up this morning at 8:00 - unheard of for me on a weekend. The weather was gorgeous and the sunshine beckoned me to get out of bed and enjoy, so I did. Instead of spending the day outside enjoying said sunshine, I spent the day feverishly cleaning my house from top to bottom, packing what I could, and scheduling "showings" of my dwelling for tomorrow morning - the first at 9:00 in the morning - yes, NINE O'CLOCK - doesn't anyone else believe in sleeping in on Sundays? Apparently not!

I have TONS more to do - I need to vacuum, try to get my son's bedroom in some sense of order, pack away all of the widgets on my kitchen table, and clean my kitchen floors. Instead of doing any of that, I'm going out. I have a long overdue girl's night out schedule for tonight and that is one thing I refuse to put on hold.

So forgive me responsibility, but I'm taking the night off. After the hell week that was month-end at work and due to next week's audit that I have to fly to Baltimore for (oh how I love the timing, right in the MIDDLE of a move!), I'm taking this night for myself.

Mamalicious Monday

Heather at The Gift Closet is hosting Mamalicious Monday, an opportunity for us moms to post advice, hints, recipes, or anything else Mom-related.

In the spirit of Mamalicious Monday, here is one of my favorite recipes for a quick dessert, sure to please your guests without keeping you in the kitchen for hours, and its name is pretty attractive, too! I originally found this recipe in Kraft Food magazine and have made it many times over - it's one of the most requested desserts for family parties now!

Angel Lush Cake

You'll Need:

- 1 (20 ounce) can crushed pineapple in juice, undrained

- 1 pkg. (4 serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling

- 1 cup COOL WHIP LITE Whipped Topping

- 1 (10 ounce) package angel food cake

- 10 strawberries


Directions:

1. Mix pineapple with its juice and the dry pudding mix in medium bowl. Gently stir in whipped topping.

2. Cut cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with 1-1/3 cups of the pudding mixture. Cover with middle cake layer and an additional 1 cup of the remaining pudding mixture. Top with remaining cake layer; spread top of dessert with the remaining pudding mixture.

3. Refrigerate at least 1 hour. Top with strawberries just before serving. Store leftover dessert in refrigerator.

Punxsutawney Phil is no friend of mine....


Punxsutawney Phil is no friend of mine. Heck, I wouldn't even call him an acquaintance at this point. Evidently the little rodent doesn't think we've suffered through this miserable winter long enough. The hibernating creature didn't see his shadow this morning on Gobbler's Knob (which I can't say with a straight face) and so it looks like we're destined for another six weeks of this cold stuff. Oh how I long to see green grass and hear birds chirping again...

Speaking of Groundhog's Day... For a short time, I lived in Huntley, IL which is pretty close to Woodstock, where parts of the film were shot. There's even a plaque commemorating "Ned's Corner". It's a cute, quaint town and it was really neat to see so many of the locations from the movie. If you're ever in the area, be sure to check it out! How many of you have seen and love the movie?
